French inspired cuisine with a nordic twist

Local produce

Nothing beats a vegetable just after picking it from the ground! We're trying to replicate that feeling by cooking with only the freshest products, mainly from local sustainable farmers on the island. You can be sure, that most of what we serve has never been transported more than 25 km!

The view

The restaurant is located in the beautiful hotel Udsigten Marstal. You don't get much closer to the sea without having your feet immersed in the water. You can follow the see from all the windows in the restaurant – and you're more than welcome to enjoy your food and wine on our terrasse.

Gastronomy

Man cannot survive without food and water. But man does live a little bit better on good food and wine! Ærø has many restaurants of different styles – we're sharing our interpretation of Ærø with a french and a new nordic approach in the maritime city of Marstal.

Valdemar Rømer

With a love for french gastronomy and danish seasonal produce, our young chef Valdemar is unleashing his creativity. Therefore the menu changes daily depending on the chef's experiments and inspiration. Every day you'll find at least one new main course on our menu – starters and desserts change often too.

Valdemar is educated from Restaurant Garopapilles, Bordeaux, which has one star in the Michelin Guide. He has furthermore experience from Restaurant Grønnegade and Kødbyens Fiskebar in Copenhagen, and Les Bacchanales, Vence, which too has been awarded with a michelin star for 12 years.

Solbo Grønt

Solbo Grønt is a sustainable farm on it's way to become certified organic. Anne and Allan from Søby are supplying us with the absolutely best vegetables – and usually it takes less than a day from harvesting the veggies till you'll find them on our menu.

Casa Ghiorsi

Casa Ghiorsi er et lille økologisk landbrug, som vi blandt andet får lækre blå congo-kartofler og små spæde karotter fra. Gården er familiedrevet og arbejder på at blive biodynamiske.

Midtmarken Økologi

Midtmarken ligger lige uden for marstal by, og driver et lille hyggligt økologisk landbrug med bl.a. kartofler og dejlige jordbær – samt økologisk svineavl.

Kammerrådgården

Kammerrådgården producerer lækkert økologiske spirer samt kartofler og løg.

Ærø Brewery

Ærø Brewery is situated in Rise, Ærø and produces great organic beer. You'll find many of them on our drinks menu. The organic beers are not to find in the supermarkets, why we're satisfied being able to offer them in our restaurant. Especially "Valnødden" (the walnut) is popular – and it's the chef's favourite too!

Meat

Vores krav til vores producenter er ikke kun, at de producerer bæredygtigt og lokalt – men også at smagen er fantastisk. Vi modtager vores kød ferskt og frisk, så vidt muligt fra lokale gårde og bæredygtige producenter.

Our Fishermen

Vi modtager friskfanget fisk fra det sydfynske øhav fanget af lokal fisker Hans Erik Stærke.
